- 4 boneless chicken thighs or breasts
- 8 oz cremini or button mushrooms, sliced
- 1/4 cup honey mustard
- 1 cup Swiss cheese, shredded
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper and marinate in olive oil and honey mustard for 30 minutes (optional).
- In a skillet, heat olive oil over medium heat and sauté mushrooms until golden brown.
- Add seasoned chicken to the skillet and cook until browned and cooked through, about 6-8 minutes per side.
- Drizzle more honey mustard on top of the chicken, add sautéed mushrooms, and layer with shredded cheese.
- Transfer skillet to the oven at 375°F (190°C) for 5-10 minutes until cheese is bubbly and golden.
- Garnish with fresh herbs and serve with your choice of sides.
