- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup coconut flakes
- 1 cup semi-sweet chocolate chips
- 1 cup chopped almonds
Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- Cream the butter, granulated sugar, and brown sugar together until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and a pinch of salt before gradually incorporating it into the wet mixture.
- Gently stir in the coconut flakes, chocolate chips, and chopped almonds.
- Spread the mixture evenly in the prepared baking dish and smooth the top with a spatula.
- Bake for about 25–30 minutes, or until golden brown and a toothpick comes out clean.
- Cool completely in the pan on a wire rack, then cut into squares or bars.
Notes
For a dairy-free option, swap butter with coconut oil. For added flavor, toast almonds before mixing.
