Description

Delightful cookie bars combining chocolate, almonds, and coconut for a chewy, nostalgic treat.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup coconut flakes
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. Cream the butter, granulated sugar, and brown sugar together until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and a pinch of salt before gradually incorporating it into the wet mixture.
  5. Gently stir in the coconut flakes, chocolate chips, and chopped almonds.
  6. Spread the mixture evenly in the prepared baking dish and smooth the top with a spatula.
  7. Bake for about 25–30 minutes, or until golden brown and a toothpick comes out clean.
  8. Cool completely in the pan on a wire rack, then cut into squares or bars.

Notes

For a dairy-free option, swap butter with coconut oil. For added flavor, toast almonds before mixing.
