Ingredients

  • 1 cup whole raw or blanched almonds
  • 1 cup mascarpone cheese
  • 2 cups cake flour
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup whole milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Powdered sugar, for frosting

Instructions

  1. Preheat the oven to 350°F (175°C). Toast the almonds on a baking sheet for about 10 minutes, stirring occasionally until golden and fragrant. Cool and chop.
  2. In a mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 4 minutes. Beat in the eggs, one at a time, followed by the vanilla extract.
  3. In another bowl, whisk together the cake flour, baking powder, and salt.
  4. Slowly add the dry mixture to the wet mixture, alternating with milk, starting and ending with the dry ingredients. Gently fold in half of the toasted almonds.
  5. Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. In a mixing bowl, combine mascarpone cheese, softened butter, and powdered sugar. Mix until smooth, adding a splash of milk if necessary.
  7. Once the cake has cooled, spread the mascarpone frosting generously on top and around the sides. Sprinkle the remaining almonds on the top for decoration.
  8. Slice and enjoy. Refrigerate leftovers for freshness.

Notes

Use room temperature ingredients for better blending. Do not skip the toasting step for the almonds, as it enhances flavor.
