A delightful Almond Mascarpone Cream Cake that combines a moist almond cake with a rich mascarpone frosting, perfect for any celebration.

- 1 cup whole raw or blanched almonds
- 1 cup mascarpone cheese
- 2 cups cake flour
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup whole milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Powdered sugar, for frosting
Instructions
- Preheat the oven to 350°F (175°C). Toast the almonds on a baking sheet for about 10 minutes, stirring occasionally until golden and fragrant. Cool and chop.
- In a mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 4 minutes. Beat in the eggs, one at a time, followed by the vanilla extract.
- In another bowl, whisk together the cake flour, baking powder, and salt.
- Slowly add the dry mixture to the wet mixture, alternating with milk, starting and ending with the dry ingredients. Gently fold in half of the toasted almonds.
- Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
- In a mixing bowl, combine mascarpone cheese, softened butter, and powdered sugar. Mix until smooth, adding a splash of milk if necessary.
- Once the cake has cooled, spread the mascarpone frosting generously on top and around the sides. Sprinkle the remaining almonds on the top for decoration.
- Slice and enjoy. Refrigerate leftovers for freshness.
Notes
Use room temperature ingredients for better blending. Do not skip the toasting step for the almonds, as it enhances flavor.
