Ingredients

Scale
  • 2 cups almond flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons baking powder
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract

  3. In another bowl, cream together the butter and sugar until fluffy.
  4. Add eggs, milk, and vanilla to the butter mixture, mixing until well combined.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Spoon the batter into muffin cups, filling each about 3/4 full, and top with sliced almonds or chocolate chips if desired.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool for a few minutes on a wire rack before enjoying.

Notes

Room temperature ingredients help in achieving a fluffy texture. Don’t overmix the batter.
