- 8 ounces button or cremini mushrooms, sliced
- 1 cup corn (fresh, frozen, or canned)
- 2 medium potatoes (russet or Yukon Gold), diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 tablespoons butter or olive oil
- 1 cup heavy cream or milk
- Fresh herbs (thyme, parsley), chopped
Instructions
- Sauté the aromatics: Melt butter or heat olive oil in a large pot over medium heat. Add diced onions and minced garlic, sautéing until fragrant and the onions are translucent, about 3-4 minutes.
- Cook the mushrooms: Add sliced mushrooms to the pot, stirring occasionally until they’ve released their moisture and turned golden brown.
- Add broth and potatoes: Pour in the broth, then add diced potatoes. Bring to a simmer and allow the potatoes to cook until tender, about 15-20 minutes.
- Incorporate the corn: Once the potatoes are soft, stir in the corn and let it cook for another 5 minutes.
- Finish with cream and herbs: Stir in the heavy cream or milk and chopped herbs. Cook for a couple more minutes.
- Adjust seasoning: Taste and add salt and pepper as needed.
- Serve warm with crusty bread or a side salad.
