- 4 cups fresh organic carrots, chopped
- 1 medium onion, diced
- 3 cloves fresh garlic, minced
- 1 piece fresh ginger, peeled and minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Fresh herbs (parsley or basil) for garnish
Instructions
- Prepare Your Ingredients: Peel and chop the carrots, dice the onion, and mince the garlic and ginger.
- Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the garlic and ginger, cooking for an additional minute until fragrant.
- Cook the Carrots: Add chopped carrots to the pot and sauté for about 5 minutes.
- Add Broth: Pour in vegetable broth to cover the carrots and bring to a boil. Reduce heat and simmer until carrots are tender, about 20 minutes.
- Blend Until Smooth: Use an immersion blender or transfer to a blender and blend until silky smooth.
- Season and Serve: Stir in salt and pepper to taste, and add lemon juice or honey if desired.
- Garnish: Serve in bowls, squeezing fresh lemon juice on top and sprinkling with fresh herbs.
Notes
Feel free to substitute with red onions or turmeric for different flavor profiles. Can be served topped with yogurt for added creaminess.
