  • 2 cups fresh apple cider
  • 1 large onion, chopped

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 sprigs fresh rosemary
  • 2 lbs sweet potatoes, peeled and cubed
  • 2 cups chicken or beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: butter for mashing sweet potatoes

Instructions

  1. Sear the short ribs with salt and pepper, in a pot, until golden brown on all sides.
  2. Sauté chopped onions, carrots, and celery until softened, then add minced garlic.
  3. Deglaze the pot with apple cider, scraping up browned bits.
  4. Braise the ribs with broth and rosemary for 2.5 to 3 hours, until fork-tender.
  5. Prepare sweet potatoes by boiling until tender, then mash with seasoning.
  6. Final touch: Serve the ribs over sweet potatoes and drizzle with sauce.

Notes

Let the ribs rest before serving for even more tender meat. Feel free to use different herbs in the mashed sweet potatoes if preferred.
