- 1 cup Apple Cider
- 2 cups All-Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Nutmeg
- 1 Freshly Grated Apple (Granny Smith recommended)
- 2 Eggs
- 1/2 cup Unsalted Butter (softened)
- 1/2 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 8 oz Cream Cheese (softened)
- 1 cup Powdered Sugar
- 1 tsp Vanilla Extract
Instructions
- In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add in the eggs, one at a time, mixing well after each addition.
- Pour in the apple cider and fold in the freshly grated apple.
- Gradually add the dry ingredients until just combined.
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Use a cookie scoop to drop rounded tablespoons of dough onto the prepared sheet.
- Bake for about 12-15 minutes or until the edges are lightly golden. Let them cool on a wire rack.
- While the cookies cool, beat together the softened cream cheese and softened butter until creamy.
- Gradually add the powdered sugar and vanilla extract, beating until smooth and fluffy.
- Spread or pipe cream cheese filling onto the flat side of one cookie, then sandwich with another cookie.
- Dust whoopie pies with powdered sugar and serve at room temperature.
Notes
Ensure butter is at room temperature for easy creaming. Avoid over-mixing the dough after adding dry ingredients.
