Ingredients

- 4 cups fresh kale, torn
- 6 strips crispy bacon, cooked and crumbled
- 2 medium crisp apples, thinly sliced
- 1 cup dried cranberries
- 1/2 cup nuts or seeds (pecans, walnuts, or sunflower seeds)
- 1/4 cup honey mustard vinaigrette
Instructions
- Prepare the kale by washing thoroughly, removing tough stems, and tearing into bite-sized pieces.
- Cook the bacon in a skillet over medium heat until crispy. Reserve a teaspoon of drippings if desired.
- Slice the apples, leaving the skin on for added nutrients.
- Mix kale, bacon, apples, cranberries, and nuts in a large bowl.
- Prepare the dressing by whisking olive oil, honey, Dijon mustard, apple cider vinegar, and reserved bacon drippings.
- Combine the salad with the dressing and toss until well-coated. Serve immediately.
Notes
For a lighter version, consider substituting bacon with turkey bacon or chickpea ‘bacon’.
