- Mixed greens (baby spinach, arugula, or spring mix)
- 2 Crisp apples (Honeycrisp, Fuji, Gala, or Granny Smith)
- 1 cup Fresh cranberries (or dried cranberries)
- 1 cup Walnuts (toasted)
- 4 oz Goat cheese (crumbled)
- 3 tbsp Olive oil
- 2 tbsp Apple cider vinegar
- 1 tbsp Honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Prep your ingredients by rinsing and drying mixed greens and slicing apples into wedges.
- Toast the walnuts in a skillet over medium heat for 3–5 minutes until fragrant.
- Make the dressing by combining olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
- Combine the salad in a large bowl with mixed greens, apple wedges, cranberries, and toasted walnuts.
- Dress the salad just before serving and gently toss to coat.
- Garnish with fresh herbs if desired, and serve immediately.
