- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted
- 2 apples, peeled and sliced (Granny Smith recommended)
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup oats
- 1/4 cup all-purpose flour
Instructions
- Preheat oven to 325°F (160°C) and line muffin tins with paper liners.
- Mix graham cracker crumbs, melted butter, and 1 tablespoon of sugar, then press into the muffin tin bottoms. Bake for 5-7 minutes.
- In a bowl, beat cream cheese until smooth, then mix in sugar, eggs, and vanilla until creamy.
- In another bowl, toss apple slices with cinnamon, nutmeg, and brown sugar.
- Spoon cheesecake mixture over the crust, top with spiced apples, then bake for 15-20 minutes or until set.
- Combine oats, flour, brown sugar, and melted butter for the topping, sprinkle on top, and bake for an additional 10 minutes.
- Allow the cheesecakes to cool completely, then refrigerate before serving.
Notes
For a lighter option, substitute cream cheese with Greek yogurt or vegan cream alternatives. Allow cooling for best flavors.
