Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 2 apples, peeled and sliced (Granny Smith recommended)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup oats
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat oven to 325°F (160°C) and line muffin tins with paper liners.
  2. Mix graham cracker crumbs, melted butter, and 1 tablespoon of sugar, then press into the muffin tin bottoms. Bake for 5-7 minutes.
  3. In a bowl, beat cream cheese until smooth, then mix in sugar, eggs, and vanilla until creamy.
  4. In another bowl, toss apple slices with cinnamon, nutmeg, and brown sugar.
  5. Spoon cheesecake mixture over the crust, top with spiced apples, then bake for 15-20 minutes or until set.
  6. Combine oats, flour, brown sugar, and melted butter for the topping, sprinkle on top, and bake for an additional 10 minutes.
  7. Allow the cheesecakes to cool completely, then refrigerate before serving.

Notes

For a lighter option, substitute cream cheese with Greek yogurt or vegan cream alternatives. Allow cooling for best flavors.
