Instructions
- Cut chicken into manageable pieces and marinate in salt, pepper, and curry powder for about 30 minutes.
- In a large skillet, heat cooking oil over medium heat and sauté chopped onions, garlic, and ginger for 3-5 minutes.
- Add marinated chicken, browning on all sides for about 5-7 minutes.
- Stir in bell peppers, tomatoes, and thyme; allow to soften for 3-4 minutes.
- Pour in coconut milk and mix well; if too thick, add a splash of chicken broth.
- Reduce heat to low, cover, and let simmer for 25-30 minutes, stirring occasionally.
