- Chicken (thighs or drumsticks)
- 2 tbsp curry powder (preferably Jamaican)
- 1 can coconut milk
- 4 cloves fresh garlic, minced
- 1 inch fresh ginger, grated
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 Scotch bonnet pepper (optional)
- 1 tbsp fresh thyme
- 2 tomatoes, chopped (fresh or canned)
- Salt to taste
- 2 tbsp cooking oil
Instructions
- Prepare the Chicken: Rinse and pat the chicken dry, cutting into manageable chunks.
- Marinate the Chicken: In a large bowl, mix chicken with curry powder, garlic, ginger, and salt. Marinate for at least 30 minutes, or overnight for deeper flavor.
- Sauté Aromatics: Heat oil in a skillet over medium heat, add onions and bell peppers, sauté until soft.
- Add the Marinade: Toss in the marinated chicken and sear for 5–7 minutes.
- Incorporate the Tomatoes: Add chopped tomatoes and Scotch bonnet, then stir in coconut milk.
- Simmer: Reduce heat to low, cover, and let simmer for 30 minutes to 1 hour.
- Finish with Thyme: In the last 5 minutes, add thyme and adjust seasoning.
- Serve: Dish over rice and garnish with thyme or green onions.
Notes
For a thicker sauce, leave uncovered for the last 10 minutes of cooking. Taste and adjust seasoning as needed.
