Ingredients

  • Chicken (thighs or drumsticks)
  • 2 tbsp curry powder (preferably Jamaican)
  • 1 can coconut milk
  • 4 cloves fresh garlic, minced
  • 1 inch fresh ginger, grated
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 1 Scotch bonnet pepper (optional)
  • 1 tbsp fresh thyme
  • 2 tomatoes, chopped (fresh or canned)
  • Salt to taste
  • 2 tbsp cooking oil

Instructions

  1. Prepare the Chicken: Rinse and pat the chicken dry, cutting into manageable chunks.
  2. Marinate the Chicken: In a large bowl, mix chicken with curry powder, garlic, ginger, and salt. Marinate for at least 30 minutes, or overnight for deeper flavor.
  3. Sauté Aromatics: Heat oil in a skillet over medium heat, add onions and bell peppers, sauté until soft.
  4. Add the Marinade: Toss in the marinated chicken and sear for 5–7 minutes.
  5. Incorporate the Tomatoes: Add chopped tomatoes and Scotch bonnet, then stir in coconut milk.
  6. Simmer: Reduce heat to low, cover, and let simmer for 30 minutes to 1 hour.
  7. Finish with Thyme: In the last 5 minutes, add thyme and adjust seasoning.
  8. Serve: Dish over rice and garnish with thyme or green onions.

Notes

For a thicker sauce, leave uncovered for the last 10 minutes of cooking. Taste and adjust seasoning as needed.
