- 1 whole chicken (3–4 pounds)
- 1/2 cup dark soy sauce
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon five-spice powder
- 2 tablespoons honey or brown sugar
- 1 tablespoon sesame oil
- 2 scallions, chopped (for garnish)
Instructions
- Prepare the Marinade: In a bowl, whisk together soy sauce, minced garlic, grated ginger, five-spice powder, honey, and sesame oil.
- Marinate the Chicken: Place the chicken in a resealable bag or bowl, pour the marinade over it, and refrigerate for at least 2 hours or ideally overnight.
- Preheat the Oven: When ready, preheat the oven to 425°F (220°C) and let the chicken sit at room temperature for 30 minutes.
- Roast the Chicken: Place the marinated chicken in a roasting pan, breast side up, and pour the remaining marinade over it. Roast for about 1 hour, basting occasionally, until the internal temperature reaches 165°F (74°C).
- Let It Rest: Remove the chicken from the oven and let it rest for 15-20 minutes before carving.
- Serve: Carve the chicken and serve it on a platter, garnished with sliced scallions and fresh herbs, alongside your favorite sides.
Notes
Allow your chicken to reach room temperature before roasting for even cooking. Don’t skip basting for a crispy skin and use a quality meat thermometer to check doneness.
