Ingredients

  • 4 slices of hearty bread (sourdough or whole grain)
  • 2 ripe avocados
  • 4 large eggs
  • 1 cup cremini or shiitake mushrooms, diced
  • 2 cloves garlic, minced
  • Fresh herbs (basil or chopped chives)
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly toast the bread slices.
  3. In a skillet, heat olive oil or butter, add mushrooms, and sauté until golden, then stir in minced garlic for another minute.
  4. In a bowl, mash avocados with salt, pepper, and herbs to your desired consistency.
  5. Spread sautéed mushrooms over the toasted bread, then layer on the avocado mash.
  6. Crack eggs on top of the avocado layer.
  7. Bake in the oven for 15-20 minutes or until eggs are set to your preference.
  8. Let cool for a minute, then serve hot, garnished with extra herbs or cheese if desired.
