- 4 slices of hearty bread (sourdough or whole grain)
- 2 ripe avocados
- 4 large eggs
- 1 cup cremini or shiitake mushrooms, diced
- 2 cloves garlic, minced
- Fresh herbs (basil or chopped chives)
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Lightly toast the bread slices.
- In a skillet, heat olive oil or butter, add mushrooms, and sauté until golden, then stir in minced garlic for another minute.
- In a bowl, mash avocados with salt, pepper, and herbs to your desired consistency.
- Spread sautéed mushrooms over the toasted bread, then layer on the avocado mash.
- Crack eggs on top of the avocado layer.
- Bake in the oven for 15-20 minutes or until eggs are set to your preference.
- Let cool for a minute, then serve hot, garnished with extra herbs or cheese if desired.
