Description

Ingredients

  • 4 large flour tortillas
  • 4 strips of bacon
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter or olive oil

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.
  2. In the same skillet, scramble the eggs over low heat until fluffy. Season with salt and pepper.
  3. On half of a tortilla, layer bacon, scrambled eggs, and cheese. Fold the tortilla over.
  4. Wipe the skillet clean, add butter or oil, and cook the quesadilla for 2-3 minutes on each side until golden and crispy.
  5. Cut into triangles and serve with salsa or avocado.
