Ingredients

- 4 large flour tortillas
- 4 strips of bacon
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1 tablespoon butter or olive oil
Instructions
- In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.
- In the same skillet, scramble the eggs over low heat until fluffy. Season with salt and pepper.
- On half of a tortilla, layer bacon, scrambled eggs, and cheese. Fold the tortilla over.
- Wipe the skillet clean, add butter or oil, and cook the quesadilla for 2-3 minutes on each side until golden and crispy.
- Cut into triangles and serve with salsa or avocado.
