Ingredients

  • 4 tart apples (e.g., Granny Smith or Honeycrisp)
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts or pecans (chopped)
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Halve the apples and remove the cores to create a cavity.
  3. In a mixing bowl, combine feta, cranberries, nuts, and spices.
  4. Stuff each apple half with the filling.
  5. Drizzle honey over the top of the stuffed apples.
  6. Place the apples in a baking dish and pour water into the bottom. Cover with aluminum foil.
  7. Bake for 25 minutes, then uncover and bake an additional 10-15 minutes until the tops are slightly crispy.
  8. Serve warm or chilled as desired.

Notes

For a twist, substitute goat cheese for feta or maple syrup for honey. Adjust baking times based on apple size.
