- 2 ripe avocados
- 4 fresh eggs

Instructions
- Preheat your oven to 425°F (220°C).
- Cut the avocados in half lengthwise and carefully remove the pits.
- Place the avocado halves on a baking sheet. If they don’t sit flat, use a little crumpled foil for support.
- Gently crack an egg into each avocado half. Be careful not to overflow or break the yolk.
- Season with salt and pepper to taste. Add herbs and any optional toppings you desire.
- Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set and the yolk is as runny as you prefer.
- Serve hot, garnished with extra herbs or a drizzle of hot sauce for added flavor.
