Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the avocados in half lengthwise and carefully remove the pits.
  3. Place the avocado halves on a baking sheet. If they don’t sit flat, use a little crumpled foil for support.
  4. Gently crack an egg into each avocado half. Be careful not to overflow or break the yolk.
  5. Season with salt and pepper to taste. Add herbs and any optional toppings you desire.
  6. Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set and the yolk is as runny as you prefer.
