- 8 oz orzo pasta
- 1 cup cherry tomatoes, halved
- 1 block (8 oz) high-quality feta cheese
- 2 cups fresh spinach
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (basil, parsley, or thyme) to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the orzo, olive oil, cherry tomatoes, garlic, and a pinch of salt and pepper. Toss well.
- Transfer the orzo mixture into a baking dish, spreading it out evenly. Place the block of feta in the center, drizzle a little more olive oil over the feta, and sprinkle additional herbs.
- Cover with aluminum foil and bake for 20-25 minutes until the tomatoes are bubbly and the feta is soft.
- Remove the foil, stir in the fresh spinach, and return to the oven for another 5-10 minutes.
- Remove from the oven and allow to cool for a few minutes before mashing the feta and mixing everything together.
- Serve warm, optionally with bread or a salad.
Notes
For added depth, consider incorporating sautéed onions or other cooked vegetables. Ensure not to overbake the feta.
