Ingredients

  • 8 oz orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 block (8 oz) high-quality feta cheese
  • 2 cups fresh spinach
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (basil, parsley, or thyme) to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the orzo, olive oil, cherry tomatoes, garlic, and a pinch of salt and pepper. Toss well.
  3. Transfer the orzo mixture into a baking dish, spreading it out evenly. Place the block of feta in the center, drizzle a little more olive oil over the feta, and sprinkle additional herbs.
  4. Cover with aluminum foil and bake for 20-25 minutes until the tomatoes are bubbly and the feta is soft.
  5. Remove the foil, stir in the fresh spinach, and return to the oven for another 5-10 minutes.
  6. Remove from the oven and allow to cool for a few minutes before mashing the feta and mixing everything together.
  7. Serve warm, optionally with bread or a salad.

Notes

For added depth, consider incorporating sautéed onions or other cooked vegetables. Ensure not to overbake the feta.
