A creamy, tangy dip made with goat cheese, fresh tomatoes, and herbs, served warm with crispy crostini.

- 8 oz goat cheese, creamy and spreadable
- 2 cups fresh tomatoes, coarsely chopped
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1/4 cup balsamic reduction
- 1 tbsp olive oil
- 1 baguette, sliced for crostini
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the chopped tomatoes with salt and pepper, and let them sit to drain moisture.
- In another bowl, blend the goat cheese with olive oil, minced garlic, and half of the basil until smooth.
- Spread the goat cheese mixture in a baking dish, layer with tomatoes, drizzle balsamic reduction, and top with remaining basil.
- Bake for 20-25 minutes until hot and bubbly; broil for a few minutes for a crispy top, if desired.
- Toast baguette slices until golden and serve warm with the dip.
Notes
For added flavor, lightly brush crostini with olive oil before toasting. Avoid using dried herbs for the best flavor.
