Ingredients

- 1 cup farro
- 2 cups vegetable broth
- 2 cups fresh mushrooms (cremini or shiitake), sliced
- 2 cloves garlic, minced
- 1 onion, diced
- 2 tablespoons butter or olive oil
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- ½ cup Parmesan cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Sauté the garlic and onion in butter or olive oil until soft.
- Add the mushrooms and cook until golden.
- Stir in the fresh thyme.
- Combine the mushroom mixture with farro and broth in a baking dish.
- Bake covered with aluminum foil for 40 minutes.
- Remove from oven, fluff with a fork, and stir in Parmesan if using.
Notes
Feel free to use quinoa instead of farro and mix in additional vegetables for extra nutrients.
