Ingredients

  • 1 cup farro
  • 2 cups vegetable broth
  • 2 cups fresh mushrooms (cremini or shiitake), sliced
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons butter or olive oil
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • ½ cup Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté the garlic and onion in butter or olive oil until soft.
  3. Add the mushrooms and cook until golden.
  4. Stir in the fresh thyme.
  5. Combine the mushroom mixture with farro and broth in a baking dish.
  6. Bake covered with aluminum foil for 40 minutes.
  7. Remove from oven, fluff with a fork, and stir in Parmesan if using.

Notes

Feel free to use quinoa instead of farro and mix in additional vegetables for extra nutrients.
