Ingredients

- 1 cup farro
- 2 cups chopped cremini mushrooms
- 4 cloves garlic, minced
- 2 tablespoons fresh thyme (or 1 tablespoon dried thyme)
- 4 cups vegetable broth
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium pot, bring 4 cups of vegetable broth to a simmer. Add 1 cup of farro and cook for 25-30 minutes until tender; drain any excess liquid.
- In a large skillet, heat olive oil or butter over medium heat. Sauté chopped mushrooms until golden, about 6-8 minutes. Add minced garlic and cook for 1 minute.
- In a large bowl, combine cooked farro, sautéed mushrooms, thyme, salt, and pepper.
- Transfer to a baking dish and spread evenly. Sprinkle Parmesan cheese on top if desired.
- Drizzle with more olive oil, cover with foil, and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until crisped on top.
- Cool for a few minutes before serving.
Notes
For a vegan option, omit Parmesan cheese. You can also use quinoa or barley instead of farro.
