Ingredients

  • 1 cup farro
  • 2 cups chopped cremini mushrooms
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme (or 1 tablespoon dried thyme)
  • 4 cups vegetable broth
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium pot, bring 4 cups of vegetable broth to a simmer. Add 1 cup of farro and cook for 25-30 minutes until tender; drain any excess liquid.
  3. In a large skillet, heat olive oil or butter over medium heat. Sauté chopped mushrooms until golden, about 6-8 minutes. Add minced garlic and cook for 1 minute.
  4. In a large bowl, combine cooked farro, sautéed mushrooms, thyme, salt, and pepper.
  5. Transfer to a baking dish and spread evenly. Sprinkle Parmesan cheese on top if desired.
  6. Drizzle with more olive oil, cover with foil, and bake for 20 minutes.
  7. Remove foil and bake for an additional 10 minutes until crisped on top.
  8. Cool for a few minutes before serving.

Notes

For a vegan option, omit Parmesan cheese. You can also use quinoa or barley instead of farro.
