Ingredients

- 2 cups cheese-filled tortellini (fresh or frozen)
- 3 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 cup fresh button mushrooms, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Fresh basil and parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant. Add mushrooms and cook until tender and golden.
- In a large bowl, combine cooked tortellini, marinara sauce, sautéed mushrooms, and half of the mozzarella. Mix well.
- Spread half of the tortellini mixture in a greased baking dish. Dollop half of the ricotta on top. Repeat layers with remaining tortellini, ricotta, and top with leftover mozzarella and parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
- Let the casserole rest for 10 minutes before serving. Garnish with fresh herbs.
