Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup whole milk
  • 2 tsp vanilla extract
  • 1 cup crushed Oreo cookies (plus extra for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your muffin tin by greasing or lining it with paper liners.
  3. Whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  4. Combine the melted butter with the eggs, milk, and vanilla in another bowl and mix well.
  5. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  6. Fold in the crushed Oreo cookies, reserving a few for topping.
  7. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Cool the muffins in the pan for 5 minutes before transferring to a wire rack.

Notes

For an extra crunch, sprinkle a mixture of crushed Oreos and sugar on top before baking.
