Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin pan with paper liners or lightly grease it.
  2. Mash the ripe bananas in a large bowl until smooth, leaving some chunks for texture.
  3. Add the melted butter and mix well. Then stir in the sugar and egg, followed by vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the banana mixture, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Spoon the batter into the muffin pan, filling each cup about ¾ full.
  8. Bake for 12-15 minutes, or until the tops are golden and a toothpick comes out clean.
