- 2–3 ripe bananas
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- Pinch of salt
- ½ cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a mini muffin pan with paper liners or lightly grease it.
- Mash the ripe bananas in a large bowl until smooth, leaving some chunks for texture.
- Add the melted butter and mix well. Then stir in the sugar and egg, followed by vanilla extract.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the banana mixture, mixing until just combined.
- Fold in the chocolate chips.
- Spoon the batter into the muffin pan, filling each cup about ¾ full.
- Bake for 12-15 minutes, or until the tops are golden and a toothpick comes out clean.
- Allow to cool slightly before transferring to a wire rack.
Notes
For healthier options, consider using whole wheat flour or reducing sugar. Ripe bananas enhance flavor significantly.
