- 4 ripe bananas
- 200g high-quality dark chocolate
- 100g butter
- 2 eggs
- 100g brown sugar
- 1 tsp vanilla extract
- 150g all-purpose flour
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch baking dish or loaf pan.
- Mash the ripe bananas in a mixing bowl until smooth and creamy.
- Melt the dark chocolate and butter in a microwave-safe bowl, stirring until smooth.
- Combine the melted chocolate mixture with the mashed bananas.
- Add eggs one at a time, whisking gently until blended. Stir in the brown sugar and vanilla extract.
- Fold in the flour and baking powder gently.
- Transfer the batter to the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool slightly before serving, optionally with vanilla ice cream.
Notes
For a vegan version, substitute butter with coconut oil and eggs with flaxseed meal or applesauce. Ensure bananas are overripe for optimal flavor.
