- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 2 ripe bananas, sliced
- 2 cups whole milk
- ¼ cup cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 tablespoon sugar (for whipping cream)
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, combine the graham cracker crumbs and melted butter until the mixture resembles wet sand. Press this mixture into the bottom of a 9×9-inch baking dish to form an even layer. Bake for 10 minutes, then let it cool.
- In a medium saucepan over medium heat, whisk together the milk, granulated sugar, and a pinch of salt. Gradually add the cornstarch mixed with a little bit of cold milk until there are no lumps. Cook this mixture, stirring continuously until it thickens. Remove it from the heat and stir in your vanilla extract. Allow this to cool slightly, then gently fold in a couple of sliced bananas.
- Pour the filling over the cooled crust, smoothing it out with a spatula. Layer the remaining banana slices on top, ensuring coverage.
- Cover the dish and refrigerate for at least four hours or overnight.
- Before serving, whip heavy cream with a little sugar until stiff peaks form. Spread this creamy goodness on top of the chilled bars, and garnish with a sprinkle of crushed graham crackers or shaved chocolate.
