Ingredients

  • 2 cups rolled oats
  • 1/2 cup nut butter (almond, peanut, or sunflower seed)
  • 1/4 cup honey or maple syrup
  • 2 eggs (or flax eggs for a vegan option)
  • 1 teaspoon baking powder
  • Optional: nuts, chocolate chips, or dried fruit

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish or line it with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Stir in the nut butter and honey or maple syrup until well combined.
  4. Gradually fold in the rolled oats, baking powder, and any optional extras you desire.
  5. Add the eggs and mix until everything is well combined.
  6. Pour the mixture into the prepared baking dish, spreading it evenly.
  7. Bake for 25-30 minutes or until the edges turn golden brown and a toothpick comes out clean.
  8. Let cool in the pan before transferring to a cutting board and slicing into bars.

Notes
