- 3 ripe bananas, mashed
- 2 cups rolled oats
- 1/2 cup nut butter (almond, peanut, or sunflower seed)
- 1/4 cup honey or maple syrup
- 2 eggs (or flax eggs for a vegan option)
- 1 teaspoon baking powder
- Optional: nuts, chocolate chips, or dried fruit
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish or line it with parchment paper.
- Mash the ripe bananas in a large bowl until smooth.
- Stir in the nut butter and honey or maple syrup until well combined.
- Gradually fold in the rolled oats, baking powder, and any optional extras you desire.
- Add the eggs and mix until everything is well combined.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake for 25-30 minutes or until the edges turn golden brown and a toothpick comes out clean.
- Let cool in the pan before transferring to a cutting board and slicing into bars.
Notes
These bars can also serve beautifully as a base for yogurt parfaits. Add yogurt and fresh fruit for a wholesome snack.
