  • 8 oz pasta (penne or farfalle)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup reserved pasta water

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook pasta until al dente. Reserve about 1 cup of pasta water, then drain.
  2. Sauté the Beef: Heat olive oil in a large skillet over medium-high heat. Add beef and season with salt and pepper. Cook until browned and cooked through (about 5-7 minutes). Remove from skillet and set aside.
  3. Cook the Peppers: In the same skillet, add more oil if needed, then add bell peppers and minced garlic. Sauté for about 5 minutes until peppers are tender.
  4. Combine Ingredients: Return the beef to the skillet, add cooked pasta, and toss together, using reserved pasta water to create a sauce.
  5. Add Seasoning: Sprinkle in Italian seasoning and adjust salt and pepper to taste.
  6. Serve: Drizzle with olive oil or top with fresh herbs like basil or parsley before serving.

Notes

Feel free to use turkey or chicken for a lighter option, or substitute sliced zucchini or mushrooms for a vegetarian twist.
