- 8 oz pasta (penne or farfalle)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 tbsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup reserved pasta water
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook pasta until al dente. Reserve about 1 cup of pasta water, then drain.
- Sauté the Beef: Heat olive oil in a large skillet over medium-high heat. Add beef and season with salt and pepper. Cook until browned and cooked through (about 5-7 minutes). Remove from skillet and set aside.
- Cook the Peppers: In the same skillet, add more oil if needed, then add bell peppers and minced garlic. Sauté for about 5 minutes until peppers are tender.
- Combine Ingredients: Return the beef to the skillet, add cooked pasta, and toss together, using reserved pasta water to create a sauce.
- Add Seasoning: Sprinkle in Italian seasoning and adjust salt and pepper to taste.
- Serve: Drizzle with olive oil or top with fresh herbs like basil or parsley before serving.
Notes
Feel free to use turkey or chicken for a lighter option, or substitute sliced zucchini or mushrooms for a vegetarian twist.
