Ingredients

  • 8 oz pasta (penne or fusilli)
  • 3 bell peppers (red, yellow, and green), sliced
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil salted water, add pasta, and cook until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Sauté the Aromatics: In a skillet, heat olive oil over medium heat; add onions and garlic, sauté until fragrant.
  3. Brown the Beef: Add ground beef to the skillet, break it up and cook until browned; season with salt, pepper, and red pepper flakes.
  4. Add the Peppers: Stir in sliced bell peppers and cook until tender.
  5. Combine Pasta and Sauce: Add drained pasta and reserved pasta water; mix well and stir in herbs.
  6. Adjust Seasoning: Taste and adjust salt and pepper; add balsamic vinegar if desired.
  7. Serve and Enjoy: Plate the dish and finish with grated cheese or fresh herbs before serving.

Notes

For a lighter version, substitute ground turkey or chicken for beef. Add fresh herbs for enhanced flavor.
