- 8 oz pasta (penne or fusilli)
- 3 bell peppers (red, yellow, and green), sliced

- 1 onion, diced

- 1 tsp dried thyme
- 1/2 tsp crushed red pepper flakes
- Salt and pepper to taste
Instructions
- Cook the Pasta: Boil salted water, add pasta, and cook until al dente. Reserve 1/2 cup of pasta water before draining.
- Sauté the Aromatics: In a skillet, heat olive oil over medium heat; add onions and garlic, sauté until fragrant.
- Brown the Beef: Add ground beef to the skillet, break it up and cook until browned; season with salt, pepper, and red pepper flakes.
- Add the Peppers: Stir in sliced bell peppers and cook until tender.
- Combine Pasta and Sauce: Add drained pasta and reserved pasta water; mix well and stir in herbs.
- Adjust Seasoning: Taste and adjust salt and pepper; add balsamic vinegar if desired.
- Serve and Enjoy: Plate the dish and finish with grated cheese or fresh herbs before serving.
Notes
For a lighter version, substitute ground turkey or chicken for beef. Add fresh herbs for enhanced flavor.
