- 8 ounces pasta (penne, fusilli, or spaghetti)
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 chopped onion
- 2–3 minced garlic cloves
- 2–3 bell peppers (red, yellow, and green, sliced)
- Salt and pepper, to taste
- Italian seasoning, to taste
- Fresh basil and parsley, for garnish
- Parmesan or ricotta cheese, for serving
Instructions
- Cook the pasta according to package instructions until al dente, drain, and set aside (reserve a bit of pasta cooking water).
- In a large skillet, heat olive oil over medium heat and brown the ground beef, breaking it apart as it cooks (about 5-7 minutes).
- Add the chopped onion and minced garlic to the skillet, stirring until the onion is translucent (about 2-3 minutes).
- Mix in the sliced bell peppers and cook until tender but still crisp (about 5 minutes).
- Season with salt, pepper, and Italian herbs. Optionally, add a splash of red wine or broth.
- Fold in the cooked pasta and a splash of reserved pasta water to create a silky sauce.
- Remove from heat and toss in fresh herbs.
- Serve warm, topped with grated Parmesan or a dollop of ricotta.
Notes
Feel free to substitute lean ground turkey for the beef or experiment with different types of pasta.
