- 2 lbs beef chuck, cut into bite-sized cubes
- 4 cups red wine (preferably Burgundy)
- 8 oz button mushrooms, sliced
- 2 large carrots, sliced
- 2 medium onions, diced
- 2 shallots, diced
- 4 oz bacon, diced
- 2 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- 4 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Prepare the ingredients by chopping vegetables and cutting beef into cubes, seasoning with salt and pepper.
- Sear the bacon in a Dutch oven until crispy, then remove. Add beef and brown on all sides.
- Cook onions and garlic in the same pot until translucent, scraping up any browned bits.
- Deglaze with red wine, scraping the bottom and allowing it to reduce for 5 minutes.
- Combine beef and bacon back into the pot with mushrooms, carrots, herbs, and beef broth. Cover the beef with liquid.
- Slow cook for 2 to 3 hours until beef is fork-tender, or transfer to an oven at 350°F.
- Final touches: adjust seasoning and remove herb sprigs. If sauce is too thin, reduce uncovered until thickened.
- Serve with crusty bread, mashed potatoes, or noodles.
Notes
Allow flavors to meld by preparing a day in advance. Avoid overcrowding the pot for even cooking.
