  • 4 cups red wine (preferably Burgundy)
  • 8 oz button mushrooms, sliced
  • 2 large carrots, sliced
  • 2 medium onions, diced
  • 2 shallots, diced
  • 4 oz bacon, diced
  • 2 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by chopping vegetables and cutting beef into cubes, seasoning with salt and pepper.
  2. Sear the bacon in a Dutch oven until crispy, then remove. Add beef and brown on all sides.
  3. Cook onions and garlic in the same pot until translucent, scraping up any browned bits.
  4. Deglaze with red wine, scraping the bottom and allowing it to reduce for 5 minutes.
  5. Combine beef and bacon back into the pot with mushrooms, carrots, herbs, and beef broth. Cover the beef with liquid.
  6. Slow cook for 2 to 3 hours until beef is fork-tender, or transfer to an oven at 350°F.
  7. Final touches: adjust seasoning and remove herb sprigs. If sauce is too thin, reduce uncovered until thickened.
  8. Serve with crusty bread, mashed potatoes, or noodles.
