Description

Ingredients

  • 1 cup Beer (lager or stout)
  • 4 cloves Garlic (minced)
  • 1 Onion (sliced)
  • 2 tbsp Honey or Brown Sugar
  • 2 tbsp Mustard
  • 2 tsp Fresh Thyme or Rosemary
  • Salt and Black Pepper to taste

Instructions

  1. In a bowl, mix beer, minced garlic, sliced onion, honey, and mustard. Marinate the chicken for at least one hour, preferably overnight.
  2. Preheat your grill to medium-high heat (or oven to 375°F).
  3. Remove chicken from marinade, letting excess drip off, and grill for 6-7 minutes on each side until golden and cooked to an internal temperature of 165°F.
  4. Strain the leftover marinade in a pot, boil, then simmer until reduced to a glaze consistency. Drizzle over cooked chicken.
  5. Let the chicken rest for 5 minutes before serving.

Notes

For a vegetarian option, substitute chicken with tofu or tempeh. Use non-alcoholic beer for a lighter version.
