- 1 cup fresh cranberries, chopped (or dried cranberries)
- 1 tbsp orange zest
- 1/4 cup orange juice
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream the butter and sugars in a large mixing bowl until light and fluffy (about 3-4 minutes).
- Add the egg, vanilla, and orange juice, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
- Fold in the cranberries and orange zest gently.
- Scoop dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes before baking for added flavor and better cookie shape.
