Description

A show-stopping dish featuring tender beef tenderloin stuffed with a flavorful mixture of mushrooms, garlic, herbs, and breadcrumbs, perfect for holiday gatherings.

Ingredients

Scale
  • 1 Beef Tenderloin, well-marbled
  • 8 oz Fresh mushrooms (cremini or portobello), chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Fresh rosemary, minced
  • 2 tbsp Fresh thyme, minced
  • 1 cup Day-old bread crumbs
  • 1/2 cup Freshly grated Parmesan cheese
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Season the beef tenderloin generously with salt and pepper, rubbing it all over for enhanced flavor.
  2. Add olive oil to a skillet over medium heat, then sauté minced garlic until fragrant—about 30 seconds.
  3. Add chopped mushrooms, cooking until they’ve released their moisture and turned golden brown, about 8-10 minutes.
  4. Stir in bread crumbs, cheese, and herbs, mixing well. Remove from heat and allow to cool slightly.
  5. Slice a pocket in the tenderloin for the stuffing, being careful not to cut all the way through.
  6. Fill the pocket with the mushroom mixture, pressing gently, then secure the opening with kitchen twine.
  7. Drizzle with more olive oil, season outside with salt and pepper, and place in a roasting pan.
  8. Roast for about 25-30 minutes, checking for an internal temperature of 135°F (57°C). Allow to rest for 10-15 minutes before slicing.

Notes

Don’t skip the resting phase; it ensures all juices redistribute for a succulent, flavorful bite.
