- 3 cloves Garlic, minced
- 2 tbsp Fresh rosemary, minced
- 2 tbsp Fresh thyme, minced
- 1 cup Day-old bread crumbs
- 1/2 cup Freshly grated Parmesan cheese
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Season the beef tenderloin generously with salt and pepper, rubbing it all over for enhanced flavor.
- Add olive oil to a skillet over medium heat, then sauté minced garlic until fragrant—about 30 seconds.
- Add chopped mushrooms, cooking until they’ve released their moisture and turned golden brown, about 8-10 minutes.
- Stir in bread crumbs, cheese, and herbs, mixing well. Remove from heat and allow to cool slightly.
- Slice a pocket in the tenderloin for the stuffing, being careful not to cut all the way through.
- Fill the pocket with the mushroom mixture, pressing gently, then secure the opening with kitchen twine.
- Drizzle with more olive oil, season outside with salt and pepper, and place in a roasting pan.
- Roast for about 25-30 minutes, checking for an internal temperature of 135°F (57°C). Allow to rest for 10-15 minutes before slicing.
