Ingredients

  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans
  • 1 can (15 oz) kidney beans
  • 1 cup corn (fresh or frozen)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Fresh cilantro, chopped
  • Lime juice, to taste

Instructions

  1. Brown the meat in a large pot over medium heat, then drain excess fat.
  2. Add chopped onions and garlic; sauté until translucent, about 5 minutes.
  3. Stir in canned tomatoes, black beans, and kidney beans; mix and cook for a few minutes.
  4. Sprinkle in spices, stirring to release aromas, and cook for an extra minute.
  5. Pour in the broth and corn, bring to a boil, then reduce heat and let it simmer for 20–30 minutes.
  6. Just before serving, add chopped cilantro and a squeeze of lime juice; stir well.
  7. Ladle the soup into bowls and top with cheese, sour cream, or crushed tortilla chips.
