- 1 lb ground beef or turkey
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans
- 1 can (15 oz) kidney beans
- 1 cup corn (fresh or frozen)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Fresh cilantro, chopped
- Lime juice, to taste
Instructions
- Brown the meat in a large pot over medium heat, then drain excess fat.
- Add chopped onions and garlic; sauté until translucent, about 5 minutes.
- Stir in canned tomatoes, black beans, and kidney beans; mix and cook for a few minutes.
- Sprinkle in spices, stirring to release aromas, and cook for an extra minute.
- Pour in the broth and corn, bring to a boil, then reduce heat and let it simmer for 20–30 minutes.
- Just before serving, add chopped cilantro and a squeeze of lime juice; stir well.
- Ladle the soup into bowls and top with cheese, sour cream, or crushed tortilla chips.
