Instructions
- Preheat the oven: Start by preheating your oven to 350°F (175°C).
- Prepare your muffin pan: Grease a mini muffin pan or line it with paper liners.
- Mix dry ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- Cream the butter and sugar: Beat together softened butter and sugar until light and fluffy.
- Incorporate the eggs: Add eggs one at a time, mixing well after each addition.
- Add wet ingredients: Stir in buttermilk and vanilla extract until combined.
- Combine mixtures: Gradually mix dry ingredients into wet ingredients, folding gently.
- Add chocolate chips: Stir in chocolate chips until evenly distributed.
- Fill muffin pan: Fill each muffin cup about three-quarters full.
- Bake: Bake for 10-12 minutes or until a toothpick comes out clean.
- Cool and serve: Cool for a few minutes before transferring to a wire rack.
Notes
For a dairy-free version, replace eggs with applesauce or banana, and use Greek yogurt for buttermilk.
