  • 4 large eggs
  • 1 cup granulated sugar
  • 2 cups whipped cream
  • 1 cup fresh or jarred cherries
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and spray with cooking oil.
  2. Prepare the cake batter as instructed on the cake mix package or by mixing wet and dry ingredients for homemade batter.
  3. Bake the batter in the pan for about 25 minutes until a toothpick comes out clean.
  4. Cool the baked cake briefly, then flip onto a towel, peel off parchment, and roll tightly in the towel. Allow to cool completely.
  5. Whip the heavy cream until soft peaks form, then gently fold in powdered sugar and vanilla.
  6. Unroll the cooled cake, spread whipped cream over it, and sprinkle with cherries.
  7. Roll the cake back up without the towel and place seam-side down on a platter.
  8. Decorate the roll with remaining whipped cream, cherries, and optional chocolate shavings.
  9. Chill in the refrigerator for at least 1 hour before serving.
