- 1 box dark chocolate cake mix or homemade chocolate cake batter
- 4 large eggs
- 1 cup granulated sugar
- 2 cups whipped cream
- 1 cup fresh or jarred cherries
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and spray with cooking oil.
- Prepare the cake batter as instructed on the cake mix package or by mixing wet and dry ingredients for homemade batter.
- Bake the batter in the pan for about 25 minutes until a toothpick comes out clean.
- Cool the baked cake briefly, then flip onto a towel, peel off parchment, and roll tightly in the towel. Allow to cool completely.
- Whip the heavy cream until soft peaks form, then gently fold in powdered sugar and vanilla.
- Unroll the cooled cake, spread whipped cream over it, and sprinkle with cherries.
- Roll the cake back up without the towel and place seam-side down on a platter.
- Decorate the roll with remaining whipped cream, cherries, and optional chocolate shavings.
- Chill in the refrigerator for at least 1 hour before serving.
