Ingredients

  • 1 boneless turkey breast
  • 2 cups fresh button or cremini mushrooms, diced
  • 1 cup dried cherries
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 8 oz cream cheese, softened
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 onion, diced

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Sauté the filling by melting butter in a skillet, adding onions and garlic until translucent, then stirring in mushrooms until golden brown.
  3. Mix the mushroom mixture with dried cherries, cream cheese, thyme, and rosemary in a bowl.
  4. Prepare the turkey breast by butterflying it if thick, laying it flat.
  5. Spread the filling evenly over the turkey breast, leaving an inch around the edges.
  6. Roll the turkey breast tightly, securing it with kitchen twine.
  7. Sear the roulade in a hot skillet with butter until golden brown on all sides.
  8. Transfer to the baking sheet and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  9. Let the roulade rest for 10 minutes before slicing and serve garnished with herbs.
