- 1 boneless turkey breast
- 2 cups fresh button or cremini mushrooms, diced
- 1 cup dried cherries
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 8 oz cream cheese, softened
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 onion, diced
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Sauté the filling by melting butter in a skillet, adding onions and garlic until translucent, then stirring in mushrooms until golden brown.
- Mix the mushroom mixture with dried cherries, cream cheese, thyme, and rosemary in a bowl.
- Prepare the turkey breast by butterflying it if thick, laying it flat.
- Spread the filling evenly over the turkey breast, leaving an inch around the edges.
- Roll the turkey breast tightly, securing it with kitchen twine.
- Sear the roulade in a hot skillet with butter until golden brown on all sides.
- Transfer to the baking sheet and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- Let the roulade rest for 10 minutes before slicing and serve garnished with herbs.
Notes
Allow the turkey to rest to keep it juicy. Adjust herbs to taste.
