Ingredients
- Sourdough starter
- All-purpose flour
- Freshly grated Parmesan cheese
- Freshly cracked black pepper
- Water
- Salt
Instructions
- Mix the sourdough starter with water and flour in a large mixing bowl. Stir until it forms a shaggy dough.
- Let it rest for 30 minutes to allow the flour to hydrate.
- Sprinkle in salt, black pepper, and Parmesan cheese. Mix until evenly distributed.
- Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth.
- Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise for about 2 hours or until doubled.
- Punch down the dough and divide it into portions. Roll into flat rounds.
- Preheat your oven to 475°F (245°C) with a baking stone or baking sheet inside.
- Bake the flatbreads for 8-10 minutes, or until golden brown.
- Let the flatbread cool slightly before slicing. Enjoy warm with butter, sautéed mushrooms, or as a pizza base.
Notes
Ensure sourdough starter is bubbly and active. Leftover dough can be refrigerated for up to three days.
