Instructions

  1. Mix the sourdough starter with water and flour in a large mixing bowl. Stir until it forms a shaggy dough.
  2. Let it rest for 30 minutes to allow the flour to hydrate.
  3. Sprinkle in salt, black pepper, and Parmesan cheese. Mix until evenly distributed.
  4. Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth.
  5. Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise for about 2 hours or until doubled.
  6. Punch down the dough and divide it into portions. Roll into flat rounds.
  7. Preheat your oven to 475°F (245°C) with a baking stone or baking sheet inside.
  8. Bake the flatbreads for 8-10 minutes, or until golden brown.
