Instructions
- Preheat your oven to 350°F (175°C) and grease your cake pans.
- Whisk together flour, baking powder, and salt in a bowl; set aside.
- Cream together softened butter and sugar until light and fluffy (about 3-4 minutes).
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Gradually add dry mixture to the creamed mixture, alternating with milk to maintain moisture.
- Gently fold in fresh blackberries.
- Divide batter into prepared pans, smoothing the tops.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a vegan option, replace eggs with a flaxseed mixture. If fresh blackberries are unavailable, use frozen but adjust baking time.
