- 3 Blood Oranges (zest and juice)
- 1/2 cup extra virgin Olive Oil
- 1 cup Sugar
- 1 1/2 cups All-Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp ground Cardamom
- 3 large Eggs
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan with parchment and grease.
- Whisk together the all-purpose flour, baking powder, baking soda, ground cardamom, and salt in a bowl and set aside.
- Mix together olive oil and sugar in another bowl until light and fluffy.
- Incorporate eggs one at a time, mixing in the vanilla extract until well combined.
- Add the zest and juice of the blood oranges to the mixture.
- Combine the dry ingredients with the wet mixture, folding gently until just mixed.
- Bake for 30-35 minutes until a toothpick comes out clean.
- Cool for 10 minutes in the pan, then transfer to a wire rack for cooling and glaze with powdered sugar and blood orange juice.
- Serve slightly warm with whipped cream or ice cream.
