- 3 ripe bananas, overripe
- 1 cup fresh blueberries (or frozen)
- 2 cups all-purpose flour
- 1 cup granulated sugar (or brown sugar)
- 1 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup unsalted butter, melted (or coconut oil)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan with butter or non-stick spray, or line it with parchment paper.
- Mash the ripe bananas in a large bowl until smooth.
- Add melted butter to the mashed bananas and mix thoroughly. Include the sugar, eggs, and vanilla, stirring until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the wet mixture, gently folding them together until just combined.
- Fold in the blueberries without crushing them.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for about 60 minutes, or until a toothpick inserted comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack.
- Slice and enjoy warm or at room temperature.
Notes
For a lower-fat version, replace butter with applesauce. Use flax eggs for a vegan version.
