Ingredients

  • 3 ripe bananas, overripe
  • 1 cup fresh blueberries (or frozen)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar (or brown sugar)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted (or coconut oil)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan with butter or non-stick spray, or line it with parchment paper.
  3. Mash the ripe bananas in a large bowl until smooth.
  4. Add melted butter to the mashed bananas and mix thoroughly. Include the sugar, eggs, and vanilla, stirring until smooth.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Add the dry ingredients to the wet mixture, gently folding them together until just combined.
  7. Fold in the blueberries without crushing them.
  8. Pour the batter into the prepared loaf pan, smoothing the top.
  9. Bake for about 60 minutes, or until a toothpick inserted comes out clean.
  10. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack.
  11. Slice and enjoy warm or at room temperature.

Notes

For a lower-fat version, replace butter with applesauce. Use flax eggs for a vegan version.
