- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 2 cups fresh blueberries
- 1/2 cup fruit jam of your choice
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until fluffy (2-3 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and cinnamon.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Carefully fold in the fresh blueberries.
- Use a cookie scoop to drop dough onto the prepared baking sheet, leaving space in between.
- Create a small well in the center of each cookie and fill it with a teaspoon of jam.
- Bake in the preheated oven for 12-15 minutes or until edges are lightly golden.
- Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
For a healthier twist, you can use coconut oil instead of butter, or swap half of the all-purpose flour for whole wheat flour. Frozen blueberries can also be used in place of fresh.
