Ingredients

- 1 cup rolled oats
- 1 cup flour (whole wheat or all-purpose)
- ½ cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- A pinch of salt
- 1 egg
- ½ cup yogurt (Greek or plant-based)
- ½ cup milk (or non-dairy alternative)
- 1 cup fresh blueberries
- Brown sugar for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it lightly.
- In a large bowl, combine the rolled oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Stir well.
- In another bowl, whisk together the egg, yogurt, and milk. Fold in the fresh blueberries.
- Pour the wet mixture into the dry ingredients and stir until just combined, being careful not to overmix.
- Fill the muffin tins about three-quarters full and sprinkle some brown sugar on top if desired.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let them cool before transferring to a wire rack.
Notes
For added texture, consider mixing in nuts or seeds. Store in an airtight container at room temperature or freeze for later enjoyment.
