- 1 lb ground beef and pork mix (or turkey/chicken)
- 1 cup mirepoix (onions, carrots, celery)
- 1 can (28 oz) crushed tomatoes
- 1 cup mushrooms (button or cremini)
- 1/2 cup red wine (or beef broth)
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
- 1/2 cup milk or cream
- Salt and pepper to taste
- 1 lb pappardelle pasta
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté mirepoix until onions are translucent.
- Add ground meat and brown, breaking it up with a spoon. If using, add mushrooms when meat starts to brown.
- Deglaze with red wine, scraping the bottom of the pan.
- Stir in crushed tomatoes and herbs, then let simmer on low heat for at least 30 minutes.
- About 10 minutes before serving, mix in milk or cream.
- Cook pappardelle in salted boiling water until al dente. Drain and combine with the sauce.
- Serve topped with freshly grated Parmesan and additional herbs.
