A delightful fusion of salmon glazed with bourbon and fresh peaches, creating a sweet and savory dish perfect for family dinners.


Ingredients

  • 4 salmon fillets, skin-on
  • 2 ripe peaches, sliced into wedges
  • 1/4 cup bourbon
  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 2 tablespoons fresh herbs (thyme or rosemary), chopped
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together the bourbon, maple syrup, olive oil, lemon juice, chopped herbs, salt, and pepper.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Slice the peaches into wedges and discard the pit.
  4. Preheat oven to 375°F (190°C) or prepare the grill on medium-high heat.
  5. Lay marinated salmon on a lined baking sheet or directly on the grill. Arrange peach wedges around the salmon.
  6. Baste salmon and peaches with leftover marinade and roast for 15-20 minutes in the oven, or grill for 10-12 minutes until salmon is flaky.
  7. Remove from heat and let rest for a couple of minutes. Serve warm, garnished with fresh herbs or a squeeze of lemon.

Notes

Perfectly cooked salmon should register an internal temperature of 145°F (63°C). Use fresh ingredients for the best flavor.
