- 4 salmon fillets, skin-on
- 2 ripe peaches, sliced into wedges
- 1/4 cup bourbon
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 2 tablespoons fresh herbs (thyme or rosemary), chopped
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a medium bowl, whisk together the bourbon, maple syrup, olive oil, lemon juice, chopped herbs, salt, and pepper.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Slice the peaches into wedges and discard the pit.
- Preheat oven to 375°F (190°C) or prepare the grill on medium-high heat.
- Lay marinated salmon on a lined baking sheet or directly on the grill. Arrange peach wedges around the salmon.
- Baste salmon and peaches with leftover marinade and roast for 15-20 minutes in the oven, or grill for 10-12 minutes until salmon is flaky.
- Remove from heat and let rest for a couple of minutes. Serve warm, garnished with fresh herbs or a squeeze of lemon.
Notes
Perfectly cooked salmon should register an internal temperature of 145°F (63°C). Use fresh ingredients for the best flavor.
