Instructions
- Prepare the short ribs by seasoning them generously with salt and pepper. Heat a large skillet over medium-high heat and add olive oil. Sear the ribs on all sides until browned, about 3-4 minutes per side.
- Combine the seared short ribs in a slow cooker with apple cider, beef broth, minced garlic, and chopped rosemary, ensuring the ribs are nearly covered.
- Cook on low for 6-8 hours, or on high for 4 hours, until the meat is tender.
- Prepare the sweet potatoes by boiling them in salted water for 15-20 minutes until tender.
- Mash the sweet potatoes with butter, minced rosemary, salt, and pepper until smooth and creamy.
- Serve the short ribs over the rosemary mashed sweet potatoes and drizzle some cooking liquid over the top. Garnish with fresh rosemary if desired.
Notes
Searing the ribs is essential for depth of flavor. For alternatives, try lamb shanks or pork. Adjust sweetness with a splash of orange juice in the cider if desired.
