Ingredients

  • 1 pound fresh strawberries, sliced
  • ¼ cup granulated sugar
  • 2 tablespoons brandy
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup milk
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 2 tablespoons malted milk powder

Instructions

  1. Wash and slice the strawberries and mix with sugar and brandy. Let sit for 30 minutes.
  2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment.
  3. In a bowl, whisk flour, baking powder, and salt.
  4. Cut in butter until the mixture resembles coarse crumbs.
  5. Add milk and stir until just combined.
  6. Pat dough into a round, cut out rounds with a biscuit cutter.
  7. Brush shortcakes with milk and bake for 12-15 minutes until golden.
  8. Whip cream with powdered sugar and malted milk powder until soft peaks form.
  9. Slice shortcakes in half, layer with strawberries and whipped cream, and assemble.
  10. Drizzle with strawberry syrup and garnish with mint.
