  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil (optional)

Instructions

  1. Prepare your ingredients by chopping vegetables and proteins into bite-sized pieces.
  2. Heat a large skillet or wok over medium-high heat, add oil.
  3. Stir-fry minced garlic and ginger until fragrant (about 1-2 minutes).
  4. Add harder vegetables (like carrots) first and cook for a few minutes.
  5. Incorporate softer vegetables (bell peppers, peas) and stir for an additional 2-3 minutes.
  6. Add the pre-cooked protein to heat through for 2-3 minutes.
  7. Incorporate cold, cooked rice, breaking it up, and stir until heated.
  8. Push the rice mixture aside, crack eggs into the skillet, scramble them, then mix with the rice.
  9. Drizzle soy sauce over the rice, mixing well to combine all ingredients.
  10. Garnish with chopped green onions and serve hot.

Notes

For a low-carb option, substitute white rice with cauliflower rice. Use frozen vegetables for quicker preparation.
